Welcome to the 1st episode of, ‘The Anti-Inflammatory Diet Miracle’. In this episode, I’ll share with you a case study of my Mom’s journey to regain her health utilizing the anti inflammatory diet.

 

My Mom is my hero.

 

When I was sixteen, my father’s company went bankrupt and we lost our house. I didn’t see my father much after that, but my mother stayed with my brother me.

She provided for us and gave us good educations that she only dreamed of having when she was growing up. She even helped me through the completion of my Master’s degree when I decided to go back to school in my thirties.

 

In her mid 50’s, my mother finally got a chance to prepare for her own retirement after she had provided for us selflessly for many years. She bravely started a new shop in her 50’s and successfully prepared for her retirement with her resourcefulness and frugality. She worked around the clock, relentlessly. She worked 7 days week so she wouldn’t become a financial burden to my brother and me.

 

A couple of years ago, she had to close her shop unexpectedly.

 

This shattered her world to the core.

 

Due to the stress and sudden changes, she became depressed and lost her smile. And, her health was dwindling. As a resilient woman that she had proven to be, she recovered slowly, but surely, and started to laugh again.

I can’t tell you how good it felt to hear her laughter again.

Even though she was recovering from her depression, her back pain and leg pain were getting worse. She visited numerous doctors in the hope of finding a solution to her debilitating pain.  

Last winter, her pain was so severe that she couldn’t walk and she ended up going to the emergency room three times.

With the experience I have had, I knew that she could reverse her symptoms with the Anti-Inflammatory Diet.

 

Through my own journey to regain my health, I learned and witnessed first hand the power of eliminating highly inflammatory foods from my diet. I also understood that by lowering inflammation in the body, joint and muscle pain dramatically decrease as the body finds its balance.

 

Not to mention, the joyous side effects of losing weight and having skin that glows.

 

To start, I gave my mother a few guidelines to alter her diet in order to lower the inflammation in her body. She managed her diet well on her own in Korea, and got herself well enough to make a long flight from Seoul, South Korea to Los Angeles to try a 30 day meal plan with me.

For the following 30 days, we would stay on the meal plan that eliminated inflammatory foods and supplied the body with dense nutrients.

 

 

This diet provided the body a chance to do its job of detoxification and regeneration to recover and reverse her symptoms.

 

In the next episodes of this Anti-Inflammatory Diet series, I’ll continue to share the journey that my mother and I took together to reverse the symptoms and regain health.

Video Part 2 – How the Anti-Inflammatory Diet Meal Plans Reduced Back Pain

Welcome to the 2nd episode of The Anti-Inflammatory Diet Miracle series.

 

In the first episode, I shared the backstory of my mother’s struggle with her back pain and leg pain. And, my journey of losing 14 pounds in 12 months and becoming Medicine FREE by reducing inflammation with the Anti-Inflammatory Diet.

As I promised in the first episode, I’ll share the journey of the 30-day meal plan that my mother and I tried to reduce inflammation to ease her back pain and leg pain.

On an overcast day in May, I picked up my Mom from LAX airport.

 

As most Korean mothers do, she expresses her love, not with so many words, but with food. Therefore, she arrived with her luggage full of the Korean food that I love.

 

My mom had been relying on pain pills and patches to relieve her symptoms for many months due to her severe back pain and leg pain.

We dove right into the meal plan to reduce the inflammation in her body.

 

The meals consisted of organic, nutrient-rich vegetables, seasonal fruits, wild caught seafood, and organic meat that is free of antibiotics and hormones and full of healthy fat.

 

We removed foods that contained gluten, dairy and high amounts of lectin which raises inflammation in the body. Also, we completely eliminated any trans fats and hydrogenated oils such as vegetable oil from our diet.

 

Fruit and licorice roots were used as sweeteners to make dishes delicious instead of using refined sugar. Also, we drank lots of filtered water to aid the body in performing its detoxification process.

 

 

Moving the body is also an essential part of detoxification.

 

Walking is a crucial “Nutrient” that your body needs to flush toxins out of your system. My mother opted to go to a neighborhood park for her Joy Walks to rejuvenate her body and mind.

 

We also incorporated gentle outdoor activities that she enjoyed doing, such as gardening.

 

This provided an essential outdoor time to get Vitamin D, which is a critical nutrient for the body. Also, simply by touching plants, paying attention to the moment and getting the fresh air helped her reduce her stress level.

My mother was making a great progress with the anti inflammatory diet and the small lifestyle changes.

Welcome to the final episode of the Miracle of the anti inflammatory diet series.

In the previous episodes, I have been sharing the 30-day journey of a meal plan that my mother and I embarked on to reduce her inflammation to alleviate her back pain and leg pain.

 

If you haven’t watched the previous episodes of this Anti-Inflammatory Diet series, make sure to watch them first.

During the course of the 30-day meal plan, we both made some great improvement with anti inflammatory foods. But, we also ran into some setbacks.

 

My Mother and I had many wonderful days where we both felt great.

We experienced a decrease in back pain, muscle pain, and joint pain. We also experienced a surge of energy, mental clarity, and improved moods.

However, some days we both experienced headaches, mood swings, brain fog, trouble sleeping, and fatigue. Even with some hard days, we stuck with our meal plan and forged on.

 

One of the great tools to stay focused on your health goal is to keep track of your progress and your setbacks.

This enables you to remind yourself how great the progress that you have been making is, in the big picture, rather than focusing on small setbacks. This also serves a dual purpose by identifying subtle patterns that raise your inflammation that you otherwise might miss.

Mistakes are great teachers if you learn from your mistakes.

 

My Mom was also studying diligently to learn more about her new tool, the anti inflammatory diet, to reverse her debilitating back pain, and joint and muscle pain.

My mother made a great improvement with her persistence and even lost 4 pounds in those six weeks. I am very proud of her.

 

I know it’s not an easy journey to reverse your symptoms. It takes time, determination and persistence. But, I also know that the rewards are beyond your imagination.

 

It’s been two years since I have become medicine free and completely got off the steroid medicine that I had relied on for 30 years for a chronic skin condition.

My Mom told me numerous times, the quality of life goes down drastically as your health declines. In our society, we consider ourselves healthy until we are not. The truth is your health declines slowly but surely if you don’t change your eating habits and lifestyle.

 

The most toxic fact about not being well is that you hurt the people you love the most.

These are the reasons I deeply value what I choose to eat. My choice enables me to enjoy my life rather than just ‘getting by’. This also gives me energy and agility to be a good partner to my husband and be there for my Mom.
